When is the proper time to finally harvest butternut squash? The first round of gourds are tan and well-sized, but seem well attached to still green runners, and a second round of flowering has begun back near the original roots.

Hi. Welcome.
I'm not sure where you are but once the stems start to turn brown is the best time to harvest them. Also right around the first frost if you get frost in your area. If you're still getting late fruits let the vines die out then pick your squash. You say the stems are still green so I'd wait a while before you pick them.

Hum don't know about that second question. I had some last year and I harvested them and ate them right away. Didn't save any seeds but they were sure yummy.
BTW, how are your lemon cucumbers doing?
